Healthy Sugar, fat, gluten free muffins

I’m making these every sunday for my family, but specially for me, as I gather 2 with me daily to work.

They are perfect for an afternoon snack with any drink, or before any workout boost.

The muffins are Gluten & sugar free !! yet delicous ❤

The recipe is simple, quick and easy. You can multiply the ingredients for bigger portions.

Ingredients (6 muffins):

  • 1 banana
  •  1 egg
  • 75g Oat flour
  • 10 Coco or Almond flour (or wheat flour)
  • 5g baking powder
  • 1 Apple or 1 pear
  • 1/2 tbsp Cinnamon

Topping:

  • or your choice (grains, fruits, chocolate chips…)

How-To

Preheat the oven on 180°

Smash the banana until smooth,

Add all dry ingredients and  mix them together with a whisk until combined,

Slice the apple into cubes, 

Add the cubes to the batter, and mix, The mixture will be thick, but don’t worry,

Divide the batter evenly between the 6 muffin cups (I used an ice cream scoop with a wire level, which worked perfectly). Sprinkle the tops of the muffins with he toping of your choice,

Bake the muffins for 16 to 19 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.

If you have leftover muffins, store them, covered, at room temperature for 2 days, or in the refrigerator for up to 5 days. Freeze leftover muffins for up to 3 months.
