Healthy Hazelnuts cake // Cake noisette

One of my all favorite cakes ! Light, easy and delicious…

All you need is

English

Hazelnut cake

  • 4 large eggs,
  • 70g Stevia or 100g Xynatol
  • 200g ground hazelnuts
  • 70g almond or rice flour (or White flour)
  • 1 tablespoon cornstarch (Maizena)
  • 1 paquet Baking powder
  • 1/2 tsp. vanilla extract
  • 100 ml Soya cream (or Heavy cream)

Caramel

  • 100ml Hazelnuts milk with no added sugar
  • 1 tablespoon Hazelnut butter (or Almond butter)
  • 1 tablespoon cornstarch (Maizena)
  • 20g stevia or 40g Xynatol
  • pinch of salt

Filing

  • No sugar added raspberry jam

How-to Cake

Combine the ground hazelnuts, cornstarch, baking powder.
In a second bowl beat the eggs and sugar on medium, and continue beating for 8 minutes.
The batter should be very thick.
Add vanila extract
Add 1/2 of the dry ingredients, and with a spatula carefully combine.
Add the other 1/2 of the dry ingredients and Soya cream, and with a spatula carefully combine.
Bake for 15-20 minutes, 180C°.

How-to Caramel

in a pan, put the whole ingredients together, an heat on medium fire untel the caramel is thick enough
